Delicious healthy fish chowder

Fish chowder is one of those things that I LOVE. It’s totally a guilty pleasure, full of dairy and potatoes and fish and other deliciousness. If I see it on a menu, I feel almost compelled to order it, but the madness had to end. I set out to make a version I could enjoy and feel a little less guilty about.

This version… this version is delicious, creamy, and so guilt free it could be eaten every day with a clean conscious. It has a slight hit of heat, but certainly not enough to overpower the delicate flavor of the fish. Roasted garlic lends an earthy flavor without the overpowering flavor of onion, and by roasting the cauliflower it brings out some subtle nuttiness.

I forgot an ingredients picture (whoops!) but I DID get a new lens for the old camera for my birthday. (Thanks Dad!!!) There is still a learning curve, but I think the pictures have improved!

Crab salad stuffed mushrooms

I love me some football. I LOVE football. I’m a Patriots fan, through and through, but I am currently living in Baltimore, Ravens territory. I’ll give the people around here this: they are DEVOTED to the teams around here. It’s actually kind of admirable. Anyway, game days require delicious eats, so this week is going to be devoted to delicious eats perfect for the big game! Today, stuffed mushrooms. These little beauties (okay, maybe they are so ugly they are cute…) are perfect. They are roasted mushrooms, filled with a refreshing crab salad, topped with a crunchy topping. Seems strange, yes, but it is beyond yummy. Oh yeah, and GO PATS!

OH! Another note: This makes enough stuffing for 2 pounds of mushrooms. Either make 2 pounds of stuffed mushrooms, or the other option is to leave the mushroom stems out of the filling and make 1 lb of mushrooms and taking a bunch of cherry tomatoes, hollowing out the seeds and stuffing them with the other half. (For any non mushroom lovers.) Or, you could just half the amount. Or just use the leftover filling in lettuce cups. Whatever!

Shrimp lettuce wrap tacos

Shrimp Lettuce wrap tacos. Wow, these are SO good. I apologize about the craptastic pictures, but it was after dark, and staying crappy outside so better pictures just aren’t happening right now. As soon as it gets nicer out, I’ll try and recook and rephotograph.

Anyway, back to the point. These are so easy, that I almost feel bad calling it a recipe, but hey. They are delicious, and can be customized to each person, so they are perfect for a family of differing tastes. These are also wickedly tasty with the citrus slaw. Yummy!!
